Traditional South Indian breakfast is built around fermented rice-and-lentil batters, prepared in different ways — steamed into idli, fried into vade, or spread thin and crisped into dose. Upma, made from semolina, and poori, a puffed fried bread, round out the everyday rotation.

The accompaniments
